Tomato Basil Soup


This is a very quick and easy meal, great for a week day supper; and, it can be varied to please the entire family. 20 minutes and you can have a healthy home cooked meal that tastes much better than its canned counterpart. This tomato basil soup is made out of ingredients you likely already have in your pantry which means no rush hour run to the store. There are many serving options. As you see, I added a cheese quesadilla to ours, but for small children, Goldfish crackers are great. Our two year old ate a bowl and a half as she "fished" for Goldfish. Soup and salad combo makes for a nice side. Or it can be paired with grilled chicken. The combinations are endless! We loved it and you can tweak the recipe to fit your taste.

Tomato basil soup:

1.5 onions chopped

3 cloves garlic or about 3 tablespoons minced garlic

olive oil

1 quart fresh canned tomatoes or 2 (28 oz) can fire roasted tomatoes (or any variety you desire) do not drain

4 oz reduced fat cream cheese

Thyme

Basil

Salt and pepper

(NOTE: The cream cheese can be omitted to reduce calories. It is added to contribute smoothness.)

Saute your onions in just enough olive oil to keep them from sticking. Cook until partiality translucent. Add garlic and cook 1-2 min longer. Stir in tomatoes, cream cheese, and add seasonings to taste. Bring to a simmer for about 3-5 minutes. Blend the entire mixture with food processor or Ninja blender. Serve hot. Serves about 4.
