Conecuh Sausage and Chicken Stirfry with Sides
If you live in Alabama you have come to love a few things (no I am not talking about football teams...). Conecuh sausage is one of those things. If you have no clue what I am talking about I am ever so sorry. Conecuh sausage is one of the most flavorful wonderful smoky link sausages you can get your hands on. With that being said, many of us try to use it in as many recipes as possible. As is with all good sausage, however, Conecuh sausage is not low in fat so unless you are on a ketogenic diet you want to use it sparingly. Like I stated earlier though, Conecuh is very flavorful so you need not use much to get a good flavor in whatever you are cooking that is why I do not feel guilty about eating this meal.
Conecuh Sausage and Chicken Stir-fry
2-3 Chopped chicken breast (or shredded chicken that you have previously boiled and frozen, thaw and drain most of the broth off before using in this recipe)
About 1/4 of a pound of sausage
1 large onion
1 large bell pepper
Tony Chachere's Seasoning to taste
I like to cook my meats first together, drain excess drippings, add veggies, then seasonings at the end to taste. I prefer more bell peppers and onions so I typically add more than the above recipe. This is a great, quick, low carb, one pot meal! Serve with your favorite healthy sides or a side salad.
