Paleo Chili
Chili is one of those dishes I haven't been able to perfect. The standard meat, beans, onions, spices, and tomatoes weren't cutting it for me. I have had to make chili for various occasions, and every one of those occasions I have apologized in advance for producing a subpar dish. I just can't get chili right. That is until I found this perfect recipe for chili! It is loaded with veggies and packed full of flavor! I have finally found the perfect chili recipe! We all love it, including the kids. Another great thing about it is that it is a Paleo recipe. Meaning you don't have to feel guilty (or bloated!) if you just have to have another bowl!
Paleo Chili
2 lbs ground turkey, beef, or deer
1 onion chopped
1 cup baby carrots chopped
1 bell pepper chopped
1/2 stalk celery chopped
1 large can (28 oz) crushed tomatoes
1/2 to 1 cup water
1 Tablespoon minced garlic
Garlic powder
Onion powder
Cumin
Chili Powder
Salt and Pepper
Put meat and vegetables in large pot to cook together until meat is well browned and vegetables are to a desired consistency. Add the minced garlic and cook an additional 1 or 2 minutes. Add crushed tomatoes and water. Finnish you chili with your favorite chili spices. I usually begin with about 2 tablespoons of chili powder, 1/2 tablespoons cumin, about 1 teaspoon each of garlic powder and onion powder, salt and pepper to taste. Add more or less spices to your specific taste!
