Chicken Salad with a Low Carb Twist!
As the name implies, the following recipe has very little carbohydrates in it. There are very many variations of chicken salad out there, but for me, this is the only one I will eat. I don't care for pickles and eggs in my chicken salad so if you fall into this category like I do, this is a great recipe for you! If you don't fall into that category, this recipe can add variety to your recipe collection. Of course you could tweak this recipe however you please, but I will be relaying a low carb version without added fruit. This recipe also calls for minimal mayonnaise. I'm not a fan of mayonnaise either, and for those of you watching your cholesterol this is not a perfect recipe, but it is a good option. So here it goes!
4 large chicken breasts boiled with salt and pepper and shredded (you can also grill or bake your chicken for a different flavor, grilled chicken works and tastes great!)
1 bundle green onions chopped
Slivered almonds (or if you are going ketogenic, chopped Walnuts contain more fat)
3/4 to 1 bottle Kraft Tuscan House Italian Dressing ( I have used other dressings but the chicken salad has been sub-par, this dressing is by far the best for this recipe)
Onion powder, salt, and pepper to taste
Just enough mayonnaise to "wet" the chicken salad. I'd estimate about a half a cup.
Mix and enjoy! Serve with celery or any other fresh vegetables.
